Protein Rich Snacks


Rumbling tummy in the afternoon, try these Banana and Oat Muffins, sure to satisfy you until dinner.

Oat and Banana Muffins


  • 2 and half cups of oats
  • 1 cup of low fat yoghurt
  • 2 very ripe bananas
  • 2 eggs
  • 2 tablespoons of honey
  • 1 teapsoon of vanilla extract
  • 2 teaspoon of baking powder
  • 1 teaspoon of bicarb of soda


Pulse oats in a blender for 15 seconds and then add all the other ingredients and blend until well combined.  Place mixture into a greased (with coconut oil) muffin tray and bake at 170oC for around twenty minutes until a skewer comes out clean.

Give it a go as a base recipe then add to it: blueberries, dark chocolate chips, cinnamon etc.
