Smoked Salmon, Mango and Pistachio Salad

Stuck with ideas of what to take for lunch, this salad is ideal to prepare the night before and it won’t go soggy because no dressing is needed.  Slice the mango just before eating.  Serves 2: Recipe from Zanna Van Dijk’s Book – Strong.

80-100g bag of rocket

1 little gem lettuce, sliced

120g sliced smoked salmon

1/2 ripe mango

4 tbsp. pistachios

Method: Just grab a couple of bowls and divide the ingredients between them. It’s that simple.
